The comes from producers, craftsmen, sheperds, farmers, in love of their regions, their work, their products.
Their knowledge are transmitted through generations and are unique.
Every products has a story, is a pride of a region, a picture of the countryside, a symbol of the harmony between nature and men…
This is the Basque Country.
These persons are proud of their production and we are lucky to enjoy it.
Everything diserves to be known and understood to its true value.

This basque duck is an old race wich almost dissapeared. It is raised in free range and only eats corn and herb. During its long growing (13/15 weeks), it develops a very subtil taste.

Suckling kintoa pig – Typical from Navarre, it was traditionnaly cooked in pastry oven during hours.
Family Jauregi reuses this method for their Suckling pigs with low temperature cooking. So, meat’s tenderness and finest is guaranteed.

Kriaxera Duck

This basque duck is an old race wich almost dissapeared. It is raised in free range and only eats corn and herb. During its long growing (13/15 weeks), it develops a very subtil taste.

Kintoa Pork

That Race of porc exists since the 12th century. Its name comes from a medieval tax on the porcs of the Old Navarre. It is raised free range and eats acorn, chestnuts and herb. Its dark red meat is juicy and has taste of nuts and grilled spices. It is prepared as charcuterie or freshly cooked.

Makolatea farm : Maïder Etchart – Hasparren 

Tasty meats, cooked dishes, seasonal sweets .. At Hasparren, crossbred Galician and blond calves of Aquitaine grow and also the Sasi Ardi Lambs, said sheep of brush, reputed in the country for their taste.
